about 12-16 roasted and peeled NM green chile (Sandia's are hot chile, Big Jim's are mild) chopped.
chopped garlic to taste
1 chopped tomatoe
1 c. beef broth or boullion cubes will work
1/2 small chopped onion
salt & pepper to taste
olive oil
about 1 cup water (if using boullion cubes)

Directions:
Directions:
Add all ingredients to oil in a heavy skillet. Cook covered allowing flavors to blend about 10 minutes then uncover and allow water to cook down. Serve over enchiladas, meat or in other dishes.
