Pie: 4 egg whites (room temperature)
1 c. sugar
1 3/4 t. baking powder
1/4 t. vanilla
2 c. coarsely broken saltines or Ritz crackers
3/4 c. pecans
Topping: small carton whip cream
1/4 c. sugar

Directions:
Directions:
Preheat oven to 350º. Butter glass pie plate. Whip egg whites on medium speed until soft peaks form, then add sugar and baking powder, whip until forms very stiff peaks and all sugar dissolved, add vanilla, mix thoroughly, add crackers and pecans, gently fold in by hand. Pour into buttered pie plate (no pie crust) and bake 1 hour. Cool and top with whipped cream.
