2 lb. ground beef
1 cup instant brown rice (Uncle Ben's), divided
1 bunch cilantro, divided
2 eggs
1 tsp. garlic salt
1 tsp. onion salt
4 garlic cloves, minced
2 cans tomato sauce (14.5 oz)
6 cans chicken broth (14.5 oz)
2 carrots, chopped
3 or 4 medium potatoes, chopped
1 medium red onion, diced (optional), divided

Directions:
Directions:
To make your meatballs:
Combine ground beef, eggs, 1/2 cup of the brown rice, half bunch of cilantro (chopped), garlic salt, onion salt, half of your diced onion, and 2 minced garlic cloves. Mix it all up in a bowl with your hands and make into your preferred meatball size (we do 1.5 inch diameter).

Boil in a large pot:
Chicken broth, tomato sauce, rest of garlic cloves, rest of onion.

After it starts boiling:
Add carrots, potatoes, the rest of the cilantro, and the other 1/2 cup of rice. Then drop in meatballs.

Reduce heat to low and simmer, covered, for 45 minutes.
