1 1/4 C water
3 3/4 C bread flour
3/4 tsp salt
1 tsp active dry yeast
Cornmeal
1 slightly beaten egg white
1 Tbsp water

Directions:
Place the first four ingredients into bread machine. Use the white bread dough setting. (Be sure you don't set it to bake as well -- you just are going to use the bread machine to knead and raise the dough.)

When dough cycle is complete, remove dough from machine and let it rest for 10 minutes. Lightly flour a board or clean countertop.

Divide dough into two parts. Roll each part into a rectangle that is approximately 10" x 8".

Roll up like a jelly roll, starting at a long side. Seal well and pinch and pull the ends so they taper. Repeat for second loaf.

Grease baking sheet or pizza stone and sprinkle with cornmeal. Place the dough with the sealed edge down on sheet or stone.

Mix egg white and 1 Tbsp water -- brush over top of loaves. Cover and let rise for 45 minutes, or until doubled in bulk. With a sharp knife, make three or four diagonal slashes about 1/4" deep evenly spaced across the top of each loaf.

Preheat oven to 375º and bake loaves for 20 minutes. Brush tops of loaves with remaining egg white mixture. Continue baking 12-15 more minutes. The bread will sound hollow when tapped with your fingers when it is done.
