2 oz. white wine
8 oz. heavy cream
3/4 lb butter
4 lbs. chicken tenderloins
2 Tbsp olive oil
2 Tbsp butter
1/2 - 3/4 C flour seasoned with garlic salt, pepper, salt
12 oz cooked bacon, chopped
1 purple onion, thinly sliced
1 large can artichoke hearts, cut into quarters
2 lb. mushrooms, thinly sliced
4 Roma tomatoes, chopped
Angel hair pasta, cooked al dente

1. Cook pasta and drain. (While pasta is cooking, prepare chicken and veggies, and then make the sauce.

2. Bacon - fry chopped bacon till crisp, and drain on paper towels. Discard most of the bacon grease, leaving 1-2 Tablespoons in pan.

3. Chicken -- dredge chicken in seasoned flour, add about 2 Tbsp butter and 2 Tbsp olive oil to skillet. Cook chicken until lightly browned and cooked through. Season with garlic salt. (Do not overcook -- it will get tough.) Remove from pan, place in large casserole, and keep warm.

4. Saute onions in the remaining butter/oil left in the pan until fairly tender. Add sliced mushrooms and saute, and add Roma tomatoes and artichoke hearts.

5. Add cooked bacon and white wine, cook until the wine reduces. Add cream and stir till heated through. Taste for seasoning and adjust as needed.

6. Pour sauce over chicken. Sprinkle with 1-2 Tbsp. capers.

7. Melt cube of butter and pour over pasta -- sprinkle liberally with Lawry's garlic salt with parsley. Place pasta in separate large bowl. If plating, make a large nest of swirled pasta, put 2 chicken tenders on top and drizzle with sauce.

Very similar to the Carino's dish. Add a Tbsp of capers right before serving to make it more like Macaroni Grill's version.
