Ingredients:  
Ingredients:  
Base
1 cup sifted flour
1/2 c butter or marg
2 Tbsp sugar
pinch salt

Filling
1 can crushed pineapple
1/4 cup sugar
2 Tbsp cornstarch
1/4 c cold water
1/2 tsp lemon juice
3/4 c chopped candied cherries.
Topping
2 egg whites
2 Tbsp sugar
1/2 cup or so of coconut

Directions:

Base
Blend all ingredients for base until crumbly. Pat into 9 in. pan. Bake in 350º for 20 min or until lightly brown.

Filling
Cook pineapple, sugar, cornstarch and water until thick. Stirring often. Cool mixture Add cherries and lemon juice. Spread over base.
Topping
Beat egg whites & sugar until stiff spread over filling sprinkle with coconut. Bake at 350º till light brown.
