5 lbs Idaho or Russet potatoes
1 white or yellow onion
parsley
mayonnaise
vinegar - cider or white
salt and pepper to taste

Wash potatoes and boil inn their skins until done. Pour off water and let cool until easily peeled. Cut up into small slices for the salad. Place in large bowl. Add chopped onion, chopped parsley to taste - I like lots! Add mayonnaise -enough to moisten the potatoes then add vinegar - maybe 2-3 tbsps at a time. Keep stirring and adding until salad is moist throughout, but not runny.
Taste as you add to judge what may be needed. Add salt and pepper to taste. Cover and put in refrigerator until next day. Taste to see if it needs some adjusting.

I always make the salad the day before it is to be served. The flavor improves overnight. Tasting and adjusting the next day is
absorbed easily and makes it just right! This is the smallest I make the salad. For a crowd adjust ingredients by how many potatoes you cook. This is a very typical German style potato salad.
