2 lb. stew meat, cubed
2 onions, chopped
2 stalks celery, diced
1 green pepper, chopped
6 carrots, cut into small pieces
3 large potatoes, diced
2 tsp. salt
1/4 tsp. pepper
1 tsp. sugar
1 tsp. oregano or 1 bay leaf
2 T. chopped parsley
3 T. minute Tapioca
2 cups tomato juice or V-8 juice

Directions:
Directions:
Place beef in large heavy pan with a tight lid. Don't brown the meat first.
Add onion, celery, green pepper, carrots and potatoes.
Combine salt, pepper, sugar, seasoning, parsley and tapioca with the 2 cups of juice.
Pour over the vegetables and meat.
Do not stir. Cover tightly. Bake at 275º for 4 hours. Do not peek during cooking time! May also be baked at 325º for 3 hours.
