16 oz. box penne pasta (I like Mueller's)
1/4 cup extra virgin olive oil
2 1/2 cups diced tomatoes
1/2 cup fresh chopped basil OR 2 tsp. dried basil
2 tsp. minced garlic OR 1/2 tsp. garlic powder
1 cup chicken broth
salt and pepper to taste
1/2 cup grated Parmesan cheese

Cook pasta according to package directions. Drain, cover and set aside. Heat olive oil in large skillet. Add tomatoes, basil, garlic, and chicken broth; simmer for 2 minutes. Toss hot pasta with sauce; mix well. Salt and pepper to taste. Sprinkle with Parmesan cheese and serve.
