1 1/2 c flour
1/2 c crushed graham crackers
1/4 c packed brown sugar
1 t baking soda
1/2 t salt
1 egg
1 1/2 c buttermilk
1/4 c vegetable oil
3/4 c semisweet chocolate chips
1 1/4 c mini marshmallows, divided

Grease 12 muffin cups; set aside. Preheat oven to 375.
In a large bowl, combine dry ingredients. In a medium bowl, combine egg, buttermilk, and oil; mix well. Stir in chocolate chips and 1 c of the marshmallows. Fill muffin cups 3/4 full making sure that there is plenty of chocolate chips in each cup. Sprinkle with remaining marshmallows. Bake for 18-20 minutes. The muffins will get brown on top. Cool for 5 minutes before removing them to a wire rack. Serve warm.
