2 pounds boneless, lean lam, cut into 1 inch pieces
2 T. butter
2 T. Curry powder (or to taste)
2 T. Flour
1 garlic clove
3 small onions, finely chopped
1 small tart apples, peeled, cored and slices
1 1/2 cups tomatoes (I use chopped in a can)
2 cups beef stock
pepper to taste

In a large saucepot, brown lamb in butter. Sprinkle curry powder and flour over meat, stirring until well coated. Add remaining ingredients and bring to a boiling point. Cover and cook until lamb is tender over low heat - about 1 1/2 hours. Serve with rice and chutney.
