1 egg 1c. skim milk 1/4c.oil 1 tsp. Maple flavoring 3/4c. dark brown sugar 2 c. All-Bran 1 1/4 c. selfrising flour butter to gease tins

Directions:
Directions:
Beat egg , then add milk, oil, maple flavoring. Stir in brown sugar. Add bran ( it looks like twigs) and let soak a few minutes. I take this time to clean up and butter my muffin tin. Fold in the flour gently. Spoon into muffin tins. and bake at 350degrees for 20 minutes

This is a plain muffin. I also make Banana-Walnut by using a mashed banana instead of oil, and adding a cup os walnuts. Using the same basic plain recipe, I make Cranberry-pecan by adding 1/2 cup cranberries and a cup of pecans. These are low-fat and healthy. However, they are especially good if split and toasted a little with a pat of butter!
