Flavor mix:
2 humpy teaspoons of milled ginger
1 teaspoon of cinnamon
1 knife-point of milled cloves
1 knife-point of milled white pepper

Dough:
2 cups of flour (white)
1 bigger hint of baking powder
½ teaspoon of bicarbonate
1 cup of crystal sugar
1 cup of soft butter
5 tablespoons of honey

For coating: 1 egg white

Directions:
Directions:
Mix the flavors/spices in one bowl. Put 2 tablespoons of sugar in a separate bowl. Mix in a separate bowl the flour, bicarbonate, baking powder, flavor mixture, sugar (except the 2 tablespoons). In small pieces add the butter and mix with the flour mixture. Then add honey and mix it. Make 1 inch thick balls and put them on a metal plate with baking paper. Flatten it to 1/2 inch thick cookies and coat with the whipped egg white and sprinkle with sugar.

Bake: 8 -10 minutes at 325.
