14 Manicotti noodles (can cook extra in case some break)
1 lb ground beef
2 cups shredded mozzarella cheese
4 eggs slightly beaten
1/4 cup seasoned bread crumbs (I like Italian)
1/4 cup graded Parmesan cheese ( or ricotta or cottage cheese)
3/4 cup chopped onion
3/4 tsp. oregano leaves
1/2 tsp. salt
1/8 tsp. pepper
1 1/2 jars of spaghetti sauce (14 oz)

Preheat oven to 350º
prepare pasta (do NOT overcook) After the noodles are done cooking, lay on tin foil to cool. Brown meat and drain fat. Then combine meat, 1 cup of the mozzarella cheese, eggs, bread crumbs, Parmesan cheese, onions, oregano, salt and pepper. Mix well. Fill pasta tubes with 1/4 cup of mixture. Use 9 x 13 pan. Spread some spaghetti sauce on the bottom of the pan, then place filled noodles in pan, and cover with remaining sauce, 1 cup of mozzarella cheese and some graded Parmesan powder. Cover pan with tin foils and bake for 45 minutes. 6-8 servings
