4 Tbs fresh lemon juice
4 Tbs olive oil
1 Tbs oregano
1 garlic clove
1 pint cherry tomatoes - halved
1/2 English cucumber - cut into 1/2 inch pieces
1/2 small red onion - sliced
1 lb large shrimp
2 8 inch pita loaves
1 yellow pepper
6 oz feta - in 1/2 inch cubes

Directions:
Directions:
Dressing: half of lemon juice, 3 tbs oil, half of oregano, half of garlic, and S & P. Whisk this together, and then add tomatoes, cucumber and onion and let stand at room temperature. To marinate the shrimp: remainder of lemon juice, oregano and garlic. Add the shrimp and marinate for 10 minutes at room temperature. Lightly brush the pitas and bell pepper on both sides with aditional oil and salt and pepper. Grill pitas on an oiled rack until browned and slightly crisp, about 2 minutes on each side. Remove from heat. Grill pepper until just softened, about 1 1/2 minutes on each side. Add a little more oil to the shrimp marinade and grill shrimp about 2 minutes on each side. Break pitas into bite-size pieces and coarsely chop bell pepper. Stir all into the one bowl, tomato mixture, pepper, pita, shrimp, and feta cheese and serve.
