1/4 cup butter
1/4 cup flour
2 cups chicken broth
2 teaspoons Worchestershire sauce
3 cups grated cheddar cheese (the sharper the better!)
2 cups sour cream
1 1/2 lb.s broccoli (steamed slightly until bright green, it will continue to cook while baking)
2 cups cooked turkey (or chicken)

12 cooked crepes (recipe here under Plain Crepes)

SAUCE: Over medium heat, melt butter in medium to large saucepan. Stir in flour & cook until bubbly. Add broth & Worchestershire sauce; cook, stirring until thickened (till it coats the back of a spoon). Add 2 cups cheese. Empty sour cream into large bowl; gradually add hot cheese sauce, stirring constantly.

ASSEMBLY: In large shallow baking dish, place cooked broccoli and turkey on each crepe. Spoon sauce over filling to cover. Fold crepes over. Once pan is full, pour remaining sauce over all. Sprinkle with remaining cheese. Cover with foil and bake for 30-45 minutes at 350 degrees or until cheese starts to get bubbly & brown

I usually make the crepes after Thanksgiving with leftover turkey. I generally break the prep up into 3 sessions (one to make the batter, two to cook the crepes themselves, then this is the third session).
