3 lbs. small red-skinned new potatoes, scrubbed, but not peeled
Salt and pepper to taste
3/4 cup (1-1/2 sticks) unsalted butter
1/2 cup plus 1 tbsp. fresh lemon juice
1-1/2 tsp. grated lemon zest
1-1/2 tsp. crushed dried thyme

Directions:

Preheat oven to 375 degrees.
Quarter the potatoes and arrange in a baking dish large enough to hold them in a single layer. Salt and pepper generously.
Combine the butter, lemon juice, and lemon zest in a saucepan and heat until the butter has melted. Pour the butter mixture over the potatoes. Sprinkle the thyme over the potatoes.
Place the dish in the oven and bake until potatoes are tender and lightly browned, 30-45 min.
