1 1/2 pounds lean ground beef
1 cup of tomato juice (sometimes I use V-8)
3/4 cup oats (quick or old fashioned, uncooked)
1 egg or 2 egg whites, slightly beaten
1/4 cup chopped onion
1/2 tsp. salt
1/4 tsp. black pepper

Directions:
Pre-heat oven to 350º. Combine all ingredients; mix lightly, but thoroughly. Press into an 8 x 4 inch loaf pan. Bake 1 hour or until meat is no longer pink and juices run clear. Drain and let stand 5 minutes before serving. Makes 8 servings.
