CRUST:
1 3/4 cups graham cracker crumbs
1/2 cup butter, melted
1/3 cup granulated sugar
CHEESECAKE:
4-8 oz. packages lowfat cream cheese
1 cup granulated sugar
1 teaspoon vanilla
4 eggs
TOPPING:
1 can lite strawberry or other fruit pie filling

1. Preheat oven to 350º
2. Stir together graham cracker crumbs, butter and 1/3 cup sugar in medium bowl. Press into the bottom and 1 1/2" up the side of springform pan or disposable pie pan.
3. Mix cream cheese, sugar & vanilla at med speed in electric mixer til well blended. Blend in eggs & mix well.
4. Pour mixture onto crust and bake 45-50 mins. until center is almost set. Allow to cool 5 minutes. Insert thin spatula or knife between crust and pan.
5. Refrigerate 4 hours or overnight.
6. Just before serving, top cake with fruit filling.

* I make individual cakes with this recipe using Nilla wafers as the crust. Buy metal cupcake liners and place a Nilla in the bottom of each one. Make the cheesecake mixture & pour over the wafers, filling cups halfway. Bake 20-30 mins. until set and cool. Spoon one tsp full of fruit filling on top of each one.
