1 1/2 cup of cooked or canned black-eyed peas
3/4 cup chopped green pepper
1/2 cup chopped celery
1/2 cup chopped red onion
1/4 cup chopped onion
1/4 cup oil
1/4 cup sugar
2 Tbls cider vinegar
1 clove garlic minced
1/2 tsp salt
1/2 tsp pepper
1/2 tsp hot sauce.

1. In a large combine th peas, pepper, celery and onions.
2. Mix the remainder of ingreients. Pour ovr the peas. Toss, let stand in frig overnight for the flavors to blend.
