1 egg
2 cup diced apples
1 1/2 cup flour
1 tsp baking soda
3/4 cup cooking oil
1 cup sugar
1/2 tsp salt
1/2 cup coconut
Directions:
Directions:
Mix diced apples, sugar and 1 tsp vanilla. Let set to make own juice while preparing other ingredients. Beat egg well. Add oil; beat again. Add apples and juice. Mix in dry ingredients (add nuts if desired.) Bake in greased and floured cake pan at 350º for 40 minutes or until done when tested with toothpick. You can use a Bundt pan or loaf pan.
