MIX:

1/4 c. oil
2 eggs
3/4 c. apple juice concentrate
1/4 c. water
1/2 t. vanilla

ADD:

2. c. rolled oats
2 t. baking powder
1/4 t. cinnamon
1/2 c. oat bran
pinch salt
1/2 c. dried fruit (any kind), chopped if necessary
1/4-1/3 c. seeds or chopped nuts

Directions:
Directions:
Pour into a 9 x 13 greased pan. Bake at 350 degrees for about 30-40 minutes, or until brown. Serve with milk.

I usually cut back on the amount of oat bran and then add in some ground flax seeds, some wheat bran, and sometimes wheat germ. If you would like a sweeter dish, use one full cup of juice concentrate and omit water. This is great for weekend or company breakfast!
