4 cups of chopped, cooked chicken (completely cool)
1 cup onion, finely chopped
1/2 cup celery, minced
1/2 cup golden raisins
salt & pepper
curry powder
mayonnaise

Directions:
Directions:
In a medium bowl, add the chicken, onion, celery and raisins. Add salt and pepper to taste. Add about 1/2 teaspoon of curry powder and several large tablespoons of mayonnaise. Mix all the ingredients together. Add more curry powder and mayonnaise until chicken salad has the desired flavor and moistness. You want to taste the curry, but it shouldn't be overpowering. Some people prefer more mayo than others.

Cover and chill in the refrigerator a few hours before serving.

This is delicious served on toasted pita or naan bread that has been spread with mango chutney.

I adapted this recipe from the bar where I worked in Atlanta. This is a delicious version of chicken salad.
