2-3 T. brown sugar
2 t. salt
1/ 4 c. sesame seed
1 t. pepper
1/ 2 c. oil
4 t. sesame oil
1/ 4 c. shoyu (soy sauce)
6 T. mirin (a sweetened sake for cooking--found at the asian market or in the international aisle)
2 T. rice vinegar
1/ 4 c. lemon or lime juice

Directions:

Mix all above ingredients together to make dressing. Make a salad of any of the following ingredients:

soba noodles (Japanese buckwheat noodles)
red pepper
cucumber
tomato
fresh spinach or watercress
bean sprouts
green onion
a cooked meat, chopped
edamame
egg roll*

Toss all just before serving with enough dressing to moisten.

*To make egg roll, whisk 3 eggs together with a little bit of water, a pinch each of sugar and salt, and about 1/ 2 t. mirin. Pour mixture into a hot skillet and cook without stirring until top begins to set. Roll up and let sit in pan a bit longer. Remove onto a plate and let cool a few minutes. Slice into small pieces.
