Toast:
12 slices day old bread
2 8 oz. cream cheese
12 eggs, beaten
2 c. milk
1/3 c. maple syrup
1 c. fresh blueberries or 16 oz. bag frozen blueberries

Sauce:
1 c. sugar
1 c. water
1 tbsp. butter
2 tbsp. corn starch
1 c. fresh blueberries or 16 oz. bag frozen blueberries

Directions:

Cut bread into 1-inch cubes. Put 1/2 the bread into a greased 9X13 pan. Cut cream cheese into 1-inch cubes and place over bread. Top with 1 cup blueberries, then remaining bread cubes. In bowl mix eggs, milk and syrup. Pour over bread mixture. Cover and chill overnight. Remove 30 minutes prior to baking. Cover and bake at 350º for 30 minutes. Uncover and bake 30 minutes.

Sauce: Combine sugar and cornstarch in pan Add water. Bring to a full boil. Boil 3 minutes stirring constantly. Stir in blueberries. Reduce heat and simmer 8 to 10 minutes. Stir in butter and serve over toast.
