Veg. Spray
2 large potatoes roughly peeled & thinly sliced
1/2 cup grated cheese
2 green onions, finely chopped
salt & pepper to taste ( other seasoning optional)
3/4 cup heavy cream

Preheat oven to 375
Spray 8 muffin tins with veg spray.
Layer potato slices, cheese, & green onions in each cup
Season w/ s&p (and other seasonings if desired) and top each cup with 1-2 Tbsp heavy cream
Cover w/ foil, bake 30-40 mins. removing foil halfway through cooking time. Invert gratins onto plate and serve

To make nice and crispy- turn in broiler at end for however long to create a nice crunch on top
