1 tbsp sesame oil
4 boneless pork loin chops, cut into bite sized pieces
1 cup pineapple-apricot preserves
2 tbsp. soy sauce
1 1/12 tsp minced ginger
salt and pepper
2 cups (or more) cooked rice

Directions:
Directions:
Heat oil in a large skillet over medium high heat. Add pork and season with salt and pepper. Brown pork, add the preserves, soy sauce and ginger to pan and bring to a simmer. Simmer until pork is cooked through 3-5 minutes. Serve with hot cooked rice.
