1 1/4 c sifted all-purpose flour.
3 slightly rounded tsp baking powder.
1 tbsp sugar.
1/2 tsp salt.
1 beaten egg.
1 c milk, if batter is too thick, add a little more milk for a smoother consistency.
2 tbsp vegetable oil, or melted shortening.

Directions:

Sift together, flour, baking powder,sugar and salt. Combine egg, milk, and vegetable oil, add to dry ingredients, stirring just until flour is moistened. (batter will be lumpy). Bake on hot griddle for pancakes or in waffle iron. May sprinkle blueberries, chopped pecans, or crisp crumbled bacon on waffles or pancakes during cooking.
