8 oz. package of soba noodles
1 c. frozen edamame, shelled
1 1/2 c. sliced or shredded carrots
1 1/2 c. thinly sliced green onion
1/2 tsp. orange zest
3 Tb. orange juice
2 Tb. miso
3 Tb. sesame oil
2 Tb. tamari or say sauce

Directions:
Boil water in a big pot. Add the noodles and edamame, cook about 5 minutes. Drain, then place in a big bowl. Add the carrots and green onion. MIx the remaining ingredients in a small bowl, whisk until blended, then pour over the noodles. Let sit for 30 minutes or more, serve chilled or room temperature.
