4 medium sweet potatoes, peeled and cut into 1 inch pieces
3 Tb rice wine vinegar
1 tsp. orange zest
3 Tb fresh orange juice
1 green onion, thinly sliced
salt and pepper
1/4 c. grapeseed oil

Directions:
Directions:
Bring a large pot of water to a boil, add the potatoes, return to a boil . Reduce the heat and simmer until tender. Drain.

Whisk the vinegar, orange zest and juice, green onion, and one tsp. salt in a small bowl. Add the oil slowly while whisking. Season with pepper. Toss the potatoes and dressing in a large bowl, refrigerate until chilled. You can make this recipe a day ahead of time!
