1 cup old-fashioned oats
1-1/3 cups unbleached all purpose flour
1/2 cup sugar-free maple syrup
1-1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. ground cinnamon
3/4 cup plain nonfat yogurt
1/2 cup nonfat milk
4 large egg whites
1/2 tsp. vanilla extract
2 ripe bananas, mashed
1 cup raisins
1/2 cup walnuts, chopped (optional)
Nonstick cooking spray

Directions:

Blend oats, flour, syrup, baking powder, baking soda and cinnamon in a medium bowl. Whisk yogurt, milk, eggs and vanilla in another medium bowl to blend. Whisk dry ingredients into yogurt mixture just until blended. Fold mashed bananas, raisins and walnuts. Spray nonstick griddle or skillet with nonstick cooking spray and heat over medium heat. Pour batter by 1/3 cupful onto griddle. Cook pancakes until bubbles form on top and bottoms are golden brown, about 2 minutes. Flip pancakes over and cook until bottoms are golden brown, about 2 minutes and serve.
