1/2 c. butter
1 1/3 c. sugar
2 1/2 tsp. baking powder
2 c. flour
2 eggs
1/2 tsp. salt
1 1/2 tsp. vanilla extract
1 c. milk
1 grated coconut ( about 2 cups)

Directions:
Directions:
Cream butter and sugar. Add eggs one at a time beating fully after each. Mix in vanilla. Sift flour, baking powder and salt. Add half of sifted flour to batter and fold in. Add half of the milk and stir. Add remainder of flour and milk as before. Add coconut and stir. Pour into greased and floured baking pan.
Bake at 325 º for 30 - 45 minutes.
