2 gal large cucumber rings, peeled, seeded and cut into rings.
2 cups dehydrated lime
8½ qts water
Put rings in limewater. Let stand 24 hours. Drain, wash in cool water, soak in water for 3 hours and drain.
Add:
1c vinegar
1 Tbsp red coloring
1 Tbsp alum
Water to cover
Heat & Simmer for 2 hours. Drain
Syrup for rings:
2 cups vinegar 2 cups water
8 sticks cinnamon 1 pkg red hot candies
Dissolve the candies before adding sugar, they dissolve faster.
10 cups sugar

Directions:
Bring to boil & pour over rings. Keep lid on tight and let stand overnight. Drain & reheat syrup for 3 mornings. The last morning, heat the rings and liquid to boiling. Pack in jars & seal. Makes 4 or 5 quarts.
