1/2 c water
1/4 c butter or margarine
1/2 c flour
1/4 c finely grated Cheddar Cheese
2 eggs


Meat Filling

1 1/2 c chopped cooked chicken, shrimp or crabmeat
2 T minced celery or water chestnuts
1 t minced onion
Seasoned salt to taste
3-4 T mayo
Combine, mixing well.

Cucumber Filling

1 c chopped cucumber
1 3-oz pkg cream cheese, softened
1/2 t grated onion
Dash of pepper
2-3 T mayo
Combine, mixing well

Cream Cheese and Olive Filling

1 8-oz pkg cream cheese
1/2 t instant chicken bouillon
1 T minced onion 1/2 c chopped ripe olives
2 T mayo
Combine, Mixing well

Directions:
Directions:
Combine water and butter in saucepan; bring to boil. Add flour all at once; stir quickly until mixture forms a ball. Remove from heat. Add cheese; beat in 1 egg at a time beating well until mixture is like velvet. Refrigerate mixture for 1 hour. Place 1 scant teaspoon on a lightly greased cookie sheet. Bake in a 400° oven for 15-18 minutes until puffed and golden brown. Split puffs in half and fill with desired filling. Makes about 4-5 dozen.

After Mick and Stacia's wedding rehearsal we served hors d'oeuvre here at the house and this was one of Nanette's creations. At this time she thought it would be great to be a chef.
