6 large zucchini
1 can white beans, drained & rinsed
1 14 oz can tomatoes (whole or chopped)
1 can chicken stock
4 cloves garlic
1/4 C basil
olive oil
3/4 C red wine

Directions:
Directions:
Clean and cut the zucchini lengthwise and then cut into 1 inch chunks. Spray large pot with Pam. Cover the bottom with olive oil. Add garlic and zucchini. Add basil, wine, tomatoes, and stock. Cook for 15 minutes. Add beans and cook 10 minutes longer. Serve with garlic bread, Parmesan cheese.
