1 c. pecans, divided - grind 1/2 c. & chop 1/2 c.
1/2 c. butter - softened
1 c. sugar
2 eggs
1 1/2 c. all purpose flour
1 tsp. baking soda
1/4 t. salt
1 c. mashed bananas (about 2 medium)
1/2 c. raisins
1/2 c. flaked coconut

Directions:
Directions:
Cream butter and sugar. Add eggs, one at a time and beat well. Combine flour, soda, salt and ground nuts. Stir into creamed mixture just until moistened. Fold in bananas, raisins, coconut and chopped nuts. Bake in greased 9 X 5 X 3 loaf pan. (I bake mine in 4 - 3 X 6 pans.) Bake at 350º for 65 to 70 minutes. Cool 10 minutes before removing from pan.
