1 lb. hamburger meat
2 can mixed vegetables, drained
1/2 onion
1 can cream of chicken or mushroom soup
4 oz. Philadelphia cream cheese
1 c. Velveeta cheese
1 sleeve Ritz crackers
1/2 stick (4 T.) margarine
1 (8 oz.) can Rotel tomatoes

Directions:
Directions:
Brown the hamburger and onion. Mix the vegetables, soup, cream cheese, and 1/2 cup Velveeta. Place in a casserole dish (9 X 13). Slice the Velveeta on top of mixture. Place crumbled crackers on top of Velvetta. Add margarine over crackers. Bake in the oven at 350º for 20 - 30 minutes. Casserole is ready when bubbling. Recipe can be doubled.
