4 eggs
2 cups sugar
2 tsp vanilla (Watkins White is really the best)
2 cups flour
2 tsp baking powder
1/2 tsp salt
1 cup milk
2 Tbsp butter

Topping:
1 cup coconut
1/2 cup brown sugar
6 Tbsp butter
1/4 cup cream
1 tsp vanilla

Directions:
Directions:
Beat eggs in a large bowl, gradually add sugar to eggs. Continue beating until thick and light. Add vanilla. In a separate bowl, combine flour, baking powder and salt. Stir into the egg mixture. Beat well. Bring milk and butter to the point of boiling. Stir into the egg mixture. Beat well. Bake at 350º for 40 minutes. To prepare topping combine all ingredients. When cake is baked but still hot, spread with topping mixture. Place cake under the broiler until the topping is bubbly and brown (about 3-5 minutes). Make sure you watch carefully!
