Ingredients: 1 pounds ground turkey 1/2 pound of turkey hot Italian sausage (pull out of casing) 1 cup Italian-flavored bread crumbs 2 eggs 1/2 cup milk 1/2 cup fresh parsley, chopped 1/2 cup grated cheese 1 tablespoon olive oil 3 garlic cloves, chopped very fine 1/2 onion, minced

Directions: |
Directions:Place all ingredients in a large bowl and mix thoroughly. Let stand 1/2 hour. Shape into medium-size meatballs. Fry gently in olive oil until lightly browned, or place on foil on a cookie sheet and bake for 1/2 hour at 350 degrees. Gently place in your own hot spaghetti sauce and cook on medium-low heat for 1 hour. |

Notes: Every Christmas Eve my family makes these for dinner. It has become a family tradition. You can double the recipe and/or put the leftovers in a large Ziplock bag and pop them in the freezer. Then they're ready anytime. (See my marinara sauce to go with them in the "Soups, Stews, Salads and Sauces" section of this cookbook.)
