1 lb. bulk mild sausage, 2 T. flour, 1/2 tsp. salt, 1 medium onion, finely chopped, 1/2 green pepper, finely chopped, 1 1/2 c. your choice, skim milk to 2% milk, 2 c. shredded cheddar cheese, 1 (8 oz.) pkg. macaroni, cooked and drained

Crumble sausage in a skillet and add onion and green pepper; cook on medium heat until cooked through. Drain excess fat. Add flour and salt to meat, blending well. Gradually add milk and cook over low heat stirring constantly until thickened. Stir in cooked macaroni and 1 cup cheese. Cook until cheese melts and macaroni is tender. Pour mixture into a lightly greased casserole dish and sprinkle remaining cheese on top. Bake at 400º for 30 minutes.
