3 lb. beef tenderloin
8 oz. fresh sliced mushrooms
1/2 cup chopped green onions
4 T. butter
1 tsp. salt
1 tsp. pepper
1/2 cup soy sauce
1/2 cup red wine
2 TBSP. honey
2 TBSP. brown sugar
butcher twine

Directions:
Directions:
Sauté mushrooms and green onions in butter until tender. Drain excess butter. Add 1/2 cup chopped parsley to mixture and put aside.

Combine the following ingredients in a bowl and stir well:
1 tsp. salt
1 tsp. pepper
1/2 cup soy sauce
1/2 cup red wine
2 T honey
2 T brown sugar

Place tenderloin in a baking dish with sides. Cut tenderloin in half lengthwise to form a pocket for mushroom stuffing. Do not cut in half, cut only 3/4 of the way through. Stuff with mushroom mixture. Tie tenderloin with butchers twine to secure mushroom stuffing. Pour marinade over beef. Cover with foil and marinate overnight in refrigerator (overnight is a must). Remove excess marinade before baking and heat in sauce pan. Bake at 425º for 30-45 minutes. May take as long as 45-50 minutes. Check with instant read thermometer. Medium is 150º. The middle will be more rare and the ends more well done. Slice tenderloin and serve with heated marinade sauce as desired.
