4 averaged size bell peppers
1 pound ground beef
1 cup rice (Minute Rice is easiest)
1 small can of tomato sauce
1 can Rotell tomatoes
Shredded Colby Jack cheese

Directions:
Directions:
Cut the tops of the bell peppers and clean out the inside. Brown the ground beef, and cook the rice according to the directions on the box.

Combine the beef, rice, tomatoes and tomato sauce. Stuff into bell peppers and top with shredded cheese. Place peppers in a lightly sprayed cooking pan and cook/heat for 30 minutes at 350º.

A variation to this is bell pepper casserole. Instead of stuffing the peppers, chop up one or two peppers and combine into other ingredients, place into lightly sprayed casserole dish, top with cheese and cook for 30 minutes at 350º.
