¼ cup Melted Butter
1 package Phyllo Pastry
1 300g package of soft goat cheese, plain or herb
1 200g package of thinly sliced smoked salmon
1 small jar of capers
Dill fresh or dried

Directions:
Directions:
Cut salmon into small 1” bite sized pieces. Melt butter. Use a pastry brush to grease the mini muffin pan with butter.

Unroll phyllo pastry, and work quickly so it doesn’t dry out & get crumbly. Cut through several layers of the phyllo at once. Cut a few 3” strips off the end of the phyllo, and cut the strips into 3” squares. Put away remaining roll. Put 4 sheets of phyllo in each section of the muffin pan, put goats cheese into the bottom with a piece of salmon and 2 capers on top. Add a pinch of dill. Fold the excess pastry over the top and pinch together, brush with melted butter.
Bake at 350º for 5 to 10 minutes or until golden brown on top. Place on trays and serve.

Phyllo pastry is paper thin pastry that is found in the freezer section. Thaw the day before in the fridge, or leave out 1 hour before starting the recipe.
