Fish fillets (any white fish- trout, sole, tilapia,orange roughy, etc.) No skin!
Lemon juice
Flour
Olive oil
Butter
chopped fresh parsley or capers

Directions:
Directions:
Begin by squeezing lemon juice on both sides of fish. Salt and pepper to taste. Coat with flour. Saute' in 1/2 olive oil and 1/2 butter. Fish will cook quickly if it is thin. Turn only once. Add chopped parsley or capers. Take up fish. Add a little lemon juice and butter to pan and scrape drippings. Drizzle over the fish and serve.
