1/2 cup chopped white or yellow onion
2 cloves garlic, minced
1 1/2 lbs. ground beef (or 8 oz. skinless chicken breast - cooked and chopped)
1 envelope taco seasoning
1 can stewed tomatoes (Del Monte Mexican Style)
1 small can chopped green chilies
flour tortillas, large
cheddar cheese, grated
1 can enhilada sauce, mild

Directions:
Directions:
Preheat oven to 375º. Brown ground beef with onions and garlic in a skillet. Put in rest of ingredients, except the last 3. Cook over medium heat for 5 minutes. Spray 9x11 casserole dish with Pam. Fill tortillas with meat mixture, add some cheese, roll them and lay them side by side in the dish. Pour enchilada sauce over them and cover them with more cheese. Bake uncovered for 20 minutes.
