1lb great northern white beans
2lb chicken breast
2 medium onions, chopped
2 4oz cans chopped mild chilis
4 minced garlic cloves
1T olive oil
6c chicken stock
1t ground cumin
1/2 t dried oregano
1/4t cayenne pepper
1/4t ground cloves
3c shredded Monterey jack cheese
chopped fresh cilantro
sour cream
salsa

Directions:

Simmer chicken in large pot for 15 minutes. Drain, cool, and remove skin. Tear into pieces. Reserve stock. Heat oil in same pot over medium heat and saute onions and garlic 10 minutes. Add chilis, cumin, garlic, oregano, Cilantro,pepper, cloves for about 1 minute. Add beans and stock. Cook 30-45 minutes, stir occasionally. Add chicken and 1 cup Monterey jack. Stir until it melts. Season with lemon pepper. Serve topped with remainder of cheese, salsa and sour cream
