2 eggs
3 C cooked sweet potatoes
1 C evaporated milk
3/4 stick margarine
1 C brown sugar
1/2 tsp. each of vanilla, nutmeg, cinnamon & salt

Topping:

1 C crushed cornflakes
1/2 C chopped pecans
1/2 C brown sugar
3/4 stick margarine, melted

Directions:
Directions:
Place eggs, sweet potatoes, milk, brown sugar, margarine and vanilla, nutmeg, cinnamon and salt in food processor. Process to mix well. Place in a greased 13x9x2 in. baking dish or a smaller dish and bake at 425º for 30 minutes. Mix cornflakes, pecans, brown sugar and melted margarine for topping. Add topping to casserole and bake an additional 15 minutes or until browned.
