Buy Choice Tenderloin
5 - 6 1/2 lb. tenderloin

Have the butcher tie the beef tender.

Rub the tenderloin with olive oil, make about 6 to 8 slits in the meat (just scatter them around so the seasoning is balanced) place a sliver of garlic in each slit and just push it in. Salt & coarse ground pepper the entire tender.

Place on open meat rack in a roaster and do not cover. Bake in a pre-heated oven 425 degrees for 35 minutes. Turn the oven down to 325 degrees and bake for 15 minutes. Remove from the oven - set on counter-cover loosely with foil-let set for 25 minutes-slice and serve. I slice mine 3/4 in. thick and serve with horseradish sauce. This is what I call med. to med. rare.

If you want it more medium-cook it 45 minutes at 425 - 15 minutes at 325.
