Old-Fashioned Egg Custard Recipe

Ingredients: 5 eggs 1 cup sugar Dash of salt 1 tsp vanilla 1/4 tsp. lemon extract 1 qt. milk 1/4 tsp. nutmeg (optional)

Directions:Break eggs into mixing bowl; beat about 2 minutes. Add sugar, salt, vanilla and lemon extract; mix thoroughly. Stir milk in until sugar disolves; Pour this mixture into individual ramkins. ( I use white ones that can be purchased at any cooking store that are round 3 in. across and about 1 1/2 or 2 in. tall.) Do not fill the ramkins all the way to the top, leave about 1/4 in. Carefully place the ramkins in pan. You need a large baking pan about 2 1/2 in. tall to place the ramkins in.) Fill the pan with water so that it comes almost half way up the side of the ramkins. Be careful not to get the water in the ramkins.
Bake in 350 degree oven for l hr. or longer if the custard isn't set. A knife should come out clean if it is set. It is best not to open the oven while the custard is cooking-just check through the glass door. Remove from pan when cool enough to do so and place on a tray in refrigator. I usually make these the morning that I am having a dinner party that night, Place the ramkin on a desert plate and spoon rasberry sauce ( the receipe is in the cookbook) on top and add a few whole rasberries for garnish. I can't tell you how many times I have served this and get raves. It is so easy to serve because you don't have to cut anything. Ha. |
