3 medium zucchinis
3 tbsp. olive oil, divided into two parts
1 medium onion
12 minced garlic cloves
1 can 28 oz diced tomatoes undrained
1 tsp basil
1/2 tsp garlic salt
1/4 tsp black pepper
1 1/2 cups dried stuffing mix
1/2 cup grated cheese
3/4 cup shredded mozzarella

Directions:
Directions:
Saute zucchini in half the oil until tender and set aside. Saute onion and garlic in the other 1/2 of olive oil and then add tomatoes and other ingredients. Simmer uncovered for 10 minutes and remove from heat. Stir in zucchini. Place mixture in baking dish. Add stuffing mix, bake at 350 for 20 mins. Uncover and add mozzarella. Bake for an additional 10 minutes.
